What is it with bakery breads? Sometimes they come out fabulous for me - like above - and sometimes they don't cook through the middle. I haven't figured out the secret yet but I swear I think it has to do with the weather... I have the same trouble with my Banana Bread.
With that said - here's the recipe I currently use for Pumpkin Bread. When it's a good "baking day" it turns out soooo yummy...
